          dragons' nest...the thing we've
          been after since Vikings first
          sailed here. And you want to keep
          it a secret? To protect your pet
          dragon? Are you serious?
       
                         HICCUP
          Yes.

This little scene right here. Astrid’s expression after Hiccup says “Yes”. The way her face goes from being tense and serious, to surprised and “taken aback” (as it says in the script here), and how her shoulders fall slowly and she leans back slightly. She’s surprised and shocked at Hiccup’s answer. She’s probably never had someone stand up to her in that way and give such a firm answer. She doesn’t know what to do, or how to fix this problem. For the first time ever, she’s defending a dragon that the worst Viking Berk has ever seen, has befriended.
Here is when she realizes just how defenseless dragons can be, and how much this dragon means to Hiccup. When asking Hiccup if he was being serious about keeping the dragon a secret to protect it, she’s probably thinking, ‘It’s a DRAGON, it doesn’t need to be protected, it can defend itself’, but when Hiccup says ‘yes’, her whole view changes. The look she gives Hiccup after is a look of realization and surprise. She sees how much Hiccup needs this dragon, and how much this dragon needs Hiccup to defend him.
